Peanut Butter & Oatmeal Cookies


There is something about Peanut Butter Cookies that I really like. It wasn’t until I found a Peanut Butter & Oatmeal Cookie recipe online that I thought about putting Oatmeal in there!

Peanut Butter & Oatmeal Cookies
  • ½ cup shortening
  • ½ cup margarine, softened
  • 1 cup packed brown sugar
  • ¾ cup white sugar
  • 1 cup peanut butter
  • 2 large eggs
  • 1-1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup quick-cooking oats
  1. Preheat the oven to 350°
  2. In large bowl mix together shortening, margarine, sugars, and peanut butter until smooth.
  3. Beat in eggs one at a time until well blended.
  4. Add flour, baking soda, and salt until completely blended.
  5. Mix in oats until just combined.
  6. Drop by the teaspoonful on to ungreased cookie sheets.
  7. Bake 10-15 minutes or until lightly brown. Do not over bake.
  8. Cool on baking sheet for a couple of minutes then move to wire rack to cool completely.

    These cookies sound great! After a long run I like to have a snack and these cookies would be perfect. Nothing unhealthy in them (e.g. corn syrup, etc.) and with the oats this would provide a really good source of protein. The only thing I would change would be using butter instead of margarine and maybe whole wheat flour as well. But thanks for the recipe, I’ll have to try this!
