Chocolate Brownie Cookies

If you are looking for a very yummy and soft brownie cookie than look no further. This recipe is adapted from Pure & Yummy and it is YUMMY! I only changed one ingredient because I happened to have milk chocolate chips on hand instead of semi-sweet chocolate chips.

Chocolate Brownie Cookies

Chocolate Brownie Cookies
  • ½ cup butter
  • 4 1 ounce squares of unsweetened chocolate, chopped
  • 3 cups milk chocolate chips, divided
  • 1-½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 4 large eggs
  • 1-½ cups sugar
  • 2 teaspoons vanilla extract
  1. Combine the butter, unsweetened chocolate, & 1-½ cups chocolate chips in a medium saucepan and cook over low heat, constantly stirring, until butter and chocolate have melted.
  2. In a small bowl, combine flour, baking powder, & salt.
  3. In mixing bowl, beat eggs, sugar & vanilla at medium speed.
  4. Gradually add the dry ingredients to egg mixture.
  5. Then add the chocolate mixture and stir in remaining 1-½ cups chocolate chips.
  6. Drop cookie dough by rounded tablespoons on to prepared baking sheet, spacing the dough balls about 2 inches apart. Bake at 350° for 10 minutes. Cool slightly on baking sheets; remove to wire racks to cool completely.
